Mole Recipe for Andy!
It's so easy!!! Buy a jar of mole from the Mexican area in your market. Sabrina said that Dona Maria is the spiciest...so that's what we opted for. The oil settles on the top and the paste is VERY thick. I scooped out about 2-3 Tbsp. and whisked it in a saucepan with some beef broth/or chicken broth. Let it come to a boil and simmer a few minutes. Add more or less to your taste and thickness desirabilty...and serve over chicken and rice. Jeff had smoked a chicken so I just used that, shredded up. I can't wait to have it again! Not quite from scratch yet but I'm going to try and work up to that since Jeff works with several men that are in the "know"...or at least their wives are. All things Mexican are homemade here. Tortillas, salsa, you name it. Although I still prefer the pico de gallo recipe I received from Andy many years ago!
